I absolutely love sweet potato, its the one vegetable that I am super confident with, roasted, in curry's, mashed, in brownies you name it. This is a great recipe for when feeling uninspired by your root veggies. This recipe is super easy and is ready in under 30 minutes.
Serves 2 Ingredients
1 Organic Large sweet potato 1/2 Can coconut milk 1 Onion 2-4 Garlic cloves 1 Stock cube – I use a Kallo organic veg stock 1 Tsp Masala spice 1 Cup water 1 handful of cashews Pinch sea salt and pepper to taste. *Optional Coriander and a bean of choice to make soup more filling. (butter beans work great with this). 1. Wash and chop the potato, onion and garlic in to small piece ( i keep the skin on for more added fibre).
2. Steam together until soft. (If you don't have a steamer boil in low water). 3. When the potato is soft, drain water and keep for later. 4. Add cooked potato, onion and garlic to blender with coconut milk, spices, stock. 5. Add 1 cup of your steamed potato water to the blender with mixed until smooth. Add more or less depended on you desired soup thickness.
6. Add salt and pepper to taste and serve.
7. Sprinkled chopped cashew nuts with your coriander.
